HEART HEALTHY EATING
Enjoy a heart-healthy recipe from the cookbook of Bonnie Brost, dietitian at the SMDC Heart & Vascular Center.
This recipe was developed by Chef Travis Johnson for a cooking class we did together several years ago. It is a great alternative to the typical mayonnaise-based tuna salad. It includes albacore tuna, which is high in omega 3 fatty acids, and olive oil, which offers the good monounsaturated fat we all need. Fresh basil, tomato and Greek olives give it a Mediterranean flare. This recipe calls for a brand of tuna that is a little lower in sodium than other brands. Enjoy!

Siclian Tuna Salad
2 small cans (5-ounce) Starkist Albacore Tuna in Water, drained (140 mg. sodium or less per serving)
¼ cup kalamata or black olives, chopped
1 medium tomato, chopped
3 green onions, finely sliced
1 clove minced garlic
2 Tablespoons fresh basil, chopped
2 Tablespoons extra virgin olive oil
2 Tablespoons red wine vinegar
1 teaspoon sugar
Pepper to taste
DIRECTIONS
Combine all ingredients in a mixing bowl. Chill and serve.
